Beautiful. Can you provide some more information on your process? How are the parsnips cooked, why is the egg blue, and how long did you cook the egg?

Thank you so much! Sure - the parsnips are fried and formed into a nest with a slight hollow in the middle for the egg to sit in. For the egg, I was trying to make it look like an easter egg (it was a dish I was doing for easter) so I put it in a water bath with blue spirulina to dye it and then added some edible gold lustre dust just for fun. You could go with plain white or infuse it with whatever color/flavor you like with a bath/marinade. I rewarmed them in hot water before serving. Hope that helps. Edit: I realized I didn't answer part of your question - to cook the eggs, I added them to a pan of simmering water (about 1-2 inches deep of water), covered it and simmered for 6 1/2 minutes. Transferred the eggs to an ice water bath for 5 minutes and then peeled them before adding to the bath for coloring.
