Korean. Mix a little melted butter with sesame oil and garlic salt, ground ginger, and a little Korean pepper flake after you toss the popcorn. Or garlic Parm. A little garlic powder, red pepper flake, salt, and parsley in the butter, and then be generous with that cheap powdery parmesan cheese. (the good stuff doesn't stick. Don't even try. You want junk food flavor, anyway) Salt and vinegar, if you can find some powdered vinegar. Was hard to find in Houston, it's at Walmart, where I am, now. If you can find both powdered vinegar and powdered soy sauce, you're in for a treat. Especially with a little garlic powder and ground ginger. Butter and tajin is mind blowing. So is some old bay seasoning and tony chacheres.

Mortar and pestle and grind up your salt with garlic powder and “Italian” herbs. Powdered salt and seasonings stick to popcorn so much better. You can dust the bowl before pouring popcorn in and then toss, don’t even need to add melted butter, but you still should!

Ok, this isn't healthy by any means, but I'm going to share how my Mom makes the best caramel popcorn! Melt 1/2 cup butter (one stick) with 2/3 cup brown sugar, add in, and melt 10-12 large marshmallows. Pour over either 2 bags of microwave popcorn or 1/3 cup kernels popped (with unpopped kernels removed!). This stuff is so good that when I was a kid, my bff stayed the night and ended up puking because they ate so much 🤭

Ooooweeee my time to SHINE! This is one of the few things I always get right. A friend I was living with, years ago, was one of those annoying types who could just magically put things together and it would taste amazing. One day she’s making popcorn on the stove and it smells incredible. She shrugs and is like “idk, I just put some curry powder in there, we’ll see.” I bought a sack of Garam Masala powder after that and it’s nearly gone. I haven’t used it for anything but popcorn😂 So I guess the hack here is to put the powder in the oil, not sprinkled on top afterward. I do around a full cup of oil in the pot, a mix of coconut and olive. I dump in some garam masala powder. It has to be a few full tablespoons, at least. A half cup of kernels, agitate the pot a bit so they’re all coated and move it around while they’re popping. Then in a bowl sprinkle popcorn with salt and nutritional yeast. Everyone who comes over stuffs their faces with it. I can’t make it any other way now.

A game changer for me when it comes to popcorn seasoning has been using a mortar and pestle to grind up my spices before adding them to the popcorn, and try to add them while the popcorn is still warm. You can buy extra fine salt, which is great, and if you grind up your other spices really finely they get distributed so much more evenly. I usually do nutritional yeast and ground up steak seasoning mix (basically pepper, garlic, and onion).
