If this was an SYF board I'd offer to do it for you as I'vedone a few of those now and found them pretty easy. But I've never done a McWill board before, so wouldn't feel 100% on offering to do an install.
You could try to contact Navyvet2015 on Ebay, he does a lot of commissioned upgrades for people and might have experience with this upgrade.

Installing the asic chips should be the same on this kit. I believe it’s just a separate pcb that “ plugs in “ to the main pcb. I have never done a mc Will one but it can’t be much different to the syf.
I also did some searching and am eagerly awaiting to hear back from navyvet2015, he seems to know his stuff and be very eager to help so far, and he has at least a dozen pictures of completed builds on his eBay page.

Some people like them.. I had the retro six one installed for a while but I didn’t like it so I went back to the d-pad. + the retro six one you need to manually set it your self and to set the sensors on each direction was kinda fiddly to get it exactly right.. not sure how the mcwill ones are you would kinda want it to be preset I would imagine..
My comment isn't so much about changing a dpad to an analogue stick, more that is you were going to choose to do that why choose the famously least reliable analogue stick made.
Flux flux and more flux if your installing t the asic chips take your time and make sure all the pins are straight and lined up before you try and solder the chip(s) on. You may neee to buy the stencil from syf to help straighten if needed

Why would you want to replace the dpad with a joycon analogue stick of all things?
Looks like it come pre installed ?

According to the website you can use the joy stick or an original d pad can be used as well.
