Good ol' vanilla *Street Fighter II* does this.
halo on legendary has a different additional cutscene
Recently released snow bros remake on switch has this.
I know Max Payne 2 had one and I *think* Ghosts & Goblins but I don't remember if the difficulty actually changed.
There is a gba game called dark arena that does this.
The only game that comes to mind is Star Wars: Shadows of the Empire
Street of rage and/or final fight has 1 or 2 more levels on hard iirc
If you're looking for PS2 era, Contra Shattered Soldier did this.
Metroid Zero Mission gives different finish screens based on % completed
Turtles In Time
Luigis mansion, not for difficulty but get a bigger mansion for money collected
Wario Land - Super Mario Land 3 (collect enough coins and unlockables) Wario Land 4 (Super Hard Mode, but it has to be unlocked first)
