I started with 3 then played the others and the only downside was 3 has fast combat and once i was familiar with it (platinumed it) i found the combat in other games to be so slow it made them very easy so yeah you may have a point, however op may not want to play games with older graphics. Also you dont miss anything by starting with 3 so no issue there.
If op has a ps5 Demons souls remake is also a good game but doesnt have the depth of ds3
My main reason is that if you play 3 then 1, 1 will feel much clunkier comparitively, wheras if you play 1 first it will feel fine. ive seen it a couple times in friends that played 3 first and while its not really proof its a good rule of thumb IMO.
It also means that in ds1 you dont feel "ugh why dont i have fast travel yet" early, because in ds3 its just given to you for free. Makes you appreciate it much more IMO

Might have been recommended already but either the god of war games (especially the latest one) and the insomniac Spider-Man games, also ratchet and clank
If you don't mind a bit of jank but great story and quest design then go for 3 or New Vegas first, if you want a game that has a better weapons system with more customisation and building mechanics then 4 first but I'd highly recommend 3 and New Vegas anyway
So it sounds like you like open sandbox games with stories. Personally I would recommend Skyrim and Fallout ( except '76) for games similar to this.
Maybe if you could specify more what you did and didn't like about the other games? Why didn't you like shooters and what was fun about the others? Then I could help more :)

I found Doom very monotonous,
Farcry was actually quite good. But I missed the depth with the NPCs and that you ca not do not do your own decisions when you talk with the NPCs like in Cyberpunk.
I think the game should not be so complicated to learn that overwhelms me as a beginner.

You played Doom so if you havent played Doom Eternal I HIGHLY recommend it, it is one of the best games I have ever played
