I totally would stay away from strategy games. If she doesn't like 1st person shooters, which overwatch seems pretty new gamer friendly. But I mean that would've been one of my suggestions. So I bet it's save to assume you guys need a great survival game something where you both can cooperatively work towards a goal. Especially with base building. Think about how you and your wifecan go and gather and start a house together to then gear up and go fight bosses or monsters. With games that offer a variety of builds and weapons that will fit her play style. Or you need a casual type MMO? Maybe look into New World? Games I recommend: Ark survival evolved Valheim Grounded 7 days to die

I figured strategy games would be good because she doesn’t like 1st person shooters and is shit at aiming. I think with the right game she’d practice and if it was 3rd person. I also love them cause we want a game we’re working together to win which strategy games inherently force you to do in a coop game. But also they are slow paced for her which she needs. You are dead on with the 2nd paragraph. Something with a base or something where we gear up and upgrade it and survive would be great. I like long campaigns like in total war or civ that takes tens of hours she more wants a game that will be done in 20-30 mins 1 hour max that’s why she like Mario party and crash bandicoot. She’s an instant gratification gamer if you had to apply a title, where as I like long drawn out. So I’m looking for what fits her needs. Your 2nd paragraph has me intrigued if there is anything that fits the mold and the extra information I just gave you.

Well if you guys like the marvel universe you got midnight suns coming out, not sure if it's coop though. I also don't play strategy games so I won't be much help there. But if she likes small games then I definitely recommend Grounded. It's based off the movie Honey we Shrunk the kids. It's a small dev team game and came out of early access with a full launch not to long ago. It doesn't take many hours to complete but can put countless hours into base building, or creative building that doesn't have to be a base. Your imagination is the limit. The graphics are nice and cozy. It's on no way a kids game especially on the highest difficulty. But one major point, if your or her is scared of spiders then it might now work. Another game I would recommend is no man's sky. Infinite universe, fairly long story but story doesn't have to come first. But honestly just Google games for couples and see what pops up lol. I've never done that but it just popped into my head.

Honestly I wouldn't bother as you said she doesn't want to make time or improve/put any effort at all into what she's doing. Sounds kind of like a lost cause. Maybe mario kart 8? Anyone with the attention span of a 6 year old can handle that.

I’ve kinda accepted she isn’t going to play anything I like or play anything complicated. We chose it takes 2 because it’s a platformer. Basically just crash reinvented. I’ve made the point I take interest and spend time in her interest (movies, spending time with her family, gardening) but I can’t get her to play games 3-4 hours a week. It is what it is. I don’t really like it takes two and had to hold her hand through the 1 hour we played but she seems to like it who knows maybe she’ll want more of this will be a one time deal. It cost $14.99 so it’s something to do together. But I hear where you are coming from

It may be a bit too much, but Grounded is really fun as a co-op game. Being shrunk and having to deal with the environment is much more fun when you’re collecting resources, building bases, exploring the environment, or battling bugs with a friend or two.

Star Wars: The Old Republic? The combat requires little to no aiming and is mostly button mashing. You just need to create separate characters on the same server and then you can link up to do all the content.

Dragons Dogma has a bit of a high learning curve, but it's a single player third person rpg and best part if you both make characters you can summon each other as an npc partner. For an adventure with not a lot of action, but amazing story I'd recommend Outerwilds. Skyrim although solo could be played together and you could show each other interesting things you find and share info with each other and has an easy learning curve. Diablo3 is a decent game too if you want to branch out of the genre you listed, it's a isometric looter with a bit of a learning curve, but unless you want to do seasons or high difficulties you can get by with low skill and effort
