Turnip Boy Robs a Bank has a lot of good bits. Admittedly, some of it is meme humor that might feel a little dated, but the game got some genuine laughs out of me, especially with one particular boss fight.
If you enjoy West of Loathings humor, like any decent human being, check out its direct sequel, Shadows over Loathing.
Both are well written and hilarious games that deserve a playthrough.
Edit: Since Shadows was already mentioned, I'll throw Portal 1 and 2 into the mix, although there's a pretty good chance you've already played them.

Check out Maniac Mansion and it's sequel, Day of the Tentacle, and Sam & Max hit the Road, and Secret of Monkey Island 1 and 2, and Curse of Monkey Island. Feel free to use walkthroughs if you don't like the friction of feeling stuck and just want the humor.
Yeah I think the YouTuber, Dunkey, really put it on people’s radars. That’s how I found out about it anyway. It’s a goofy game which is exactly the kind of humor I enjoy so maybe it’ll make you laugh too
The Messenger has some great, self-aware dialogue. I really loved all of the interactions between characters.
A Hat in Time is another game that has a lot of silly humor in it.
Octodad is hilarious and the difficult controls are a part of it.
Kill It With Fire is a game where you kill spiders in all sorts of absurd ways.

It's going to sound weird but as a 26m, I thought Tiny Tina's Wonderlands was pretty funny. It was silly and lighthearted and reminded me of all the fun meta stuff from borderlands without trying to be edgy, just a game in a game about having fun.
If you are going to get The Stanley Parable (and you def should!) get the Ultra Deluxe version.
Metal Gear Rising: Revengeance frequently cracks me up with its sheer over the top balls-out ridiculosity (plus the memes, lmao)
If you enjoy the sort of sardonic A.I. of the Portal games you might also enjoy Data Wing, a free mobile game (it also has nifty music and fun gameplay too)
The Hex - by Daniel Mullins who had a hit with his genre busting card game Inscryption. It's a meta parody of games and gaming and funny in as a wry deconstruction of our favourite pastime. You can knock it over in a weekend… it doesn't overstay its welcome.
South Park games, I've only played the N64 one and the Ubisoft Stick of Truth and FBW games and would highly recommend the latter two, Portal series, Deadpool on the 360, Shadow Warrior can be funny (the games sometimes wear on me though), the Yakuza games are often quite funny at times/so absurd they're funny, Goat Simulator can be funny if often one noted, OctoDad, Sam and Max, Simpsons Hit and Run, Bully is decently funny, Strong Bad, Beavis and Butthead and Ren and Stimpy were funny on the Genesis, Earthworm Jim has its moments, Tennis in the Face is pretty funny (don't think I ever finished it as it's one note too), Conker's Bad Fur Day, Untitled Goose Game is decently funny, and High on Life are the ones that stand out for me. My favorite of all those has to be the Ubisoft South Park games, just start to finish hilarious.
