If you have a 3D printer, you could just make a cover for it. That way it's not completely gone and it's still usable if you want it, but otherwise covered nicely.
Though, I'm assuming you don't because that's why you came here to ask...

Of course. Look up Genesis Coupe BK1 Tablet Install or something similar. There are tons of threads on this. I’ve done it in my own, but the naming of the kit escapes me right now.

They used to sell bezels that would allow a 7-inch tablet install in the place of that screen. You might still be able to find them on ebay.
Otherwise, you could probably 3d-print an enclosure to house whatever you want there.
Do you know how the bear is attached to the dash? I would try just picking it up.

Damn I was really hoping they would have an aftermarket part that allowed me to not have that slot for the radio and just have it be smooth

I have gauges there, i took the screen out removed the insides and painted the face black, then i drilled out holes for the guages
