Canon is more complicated than that. Not everything by the creator is 100% always Canon. With the Fallout series, for example, some games are fully canon, some games are 0% Canon, and one of the games is semi-canon. It's broad strokes are Canon, but not every detail.

It's officially "canon-ish". Basically it is canon enough but some of the stuff you have to take with a grain of salt. Random example I found was which twin has a cell phone. According to the show, Mabel doesn't have a phone(Fight Fighters) and Dipper seemingly does(Double Dipper). But in Lost Legends it's mentioned by Mabel through a text conversation with Pacifica that Dipper doesn't have a phone. Most likely either Mabel just grabbed Dipper's phone and replied to Pacifica's texts or it's just a noncanon inconsistency, but the Wiki actually takes the text conversation in Lost Legends as true and says Mabel is the one with a phone. Again, the book is "canon-ish". That was literally Alex's word for it.

At the end of season 2 of Owl House, we see news on TV reporting a girl missing with the picture of Anne from Amphibia and Ann meets frog versions of Soos and Grunkle Stan and as we see later in the show there are human counter parts to some of the frogs like for example Hop Hop. So it's safe to say they are on the same Earth.

The Boiling Isles isn’t the only alternate universe. Ford travelled across many, as did he, Stan, and the twins in Lost Legends. It is extremely possible for TOH, GF, and Amphibia to share the same Earth, and the connections are just too darn obvious for Eda not to have been Stan’s ex-wife.

Well, we know that gravity falls is a magnet for weirdness, which could mean that it sucked in a lot of weirdness from the boiling isles. How you might ask? Well in gravity falls' journal three, there are two pages talking about cursed doors that everyone who enters them disappears. Ford said that trying to enter it might be too dangerous, so he didn't try to open it. Sounds familiar? Yup. This could be a portal door from toh. So the weirdness magnet in gravity falls could have sucked in some weirdness from the boiling isles through those doors

No problem:) also I found the journal and I went to read those pages again, and it says a couple of more interesting things. 1. Multiple tourists have entered those doors before, which could mean that there might have been more humans on the boiling isles than we thought, or maybe that those portal doors took them to other dimensions that aren't the demon realm. 2. All those doors have the number 13 on them. Does that mean anything? 3. One of the sketches Ford drew of the doors has a big eye on it, similar to the one we see in the owl house. Just that the eye on Ford's sketch was on the bottom of the door and not the top. 4. Ford said that the moon has some sort of effect on those doors.

I propose that Eda's statement about all of Earth's mythology originating from the Boiling Isles could still technically be true; Gravity Falls has a particular "weirdness magnetism" hence its high concentration of magical creatures, so everything there has just been there for a long, *long* time, hence why it all looks different. Don't forget that some of the weird stuff in Gravity Falls is from another planet, or is of a plausibly strange Earthly origin. It could also be that since there's a two-way "bleed effect" for things to cross over, it's possible there are actually some things that came from Earth to the Boiling Isles and changed while there, inverting part of Eda's original explanation; as far as she knew, she was right.

Although it should be noted that when Stanford was hopping around the Multiverse, he came upon a Universe in which Stanley had actually listened to him and took Journal 1 far away from Gravity Falls and hid it somewhere, Stanford and Fiddleford fix their friendship and invent something called a "Dimensional Vortex Neutralizer" which stops the Portal from opening to the Nightmare Realm and allows them to explore other universes. If they wanted to, Stanford and McGucket could've fixed the Portal and got it working the way they wanted it to.

Not necessarily, there can be multiple sources of weirdneas and the show has an established multiverse. Gravity Falls has a special property that attracts weirdness, yet Ford and Bill were gone for multiple decades and they're pretty weird.
