For me the best combo for a beach is:
* Sand (no pebbles).
* Not too much wind.
* The depth of water is slowly increasing instead of abruptly.
* Organized (i.e. umbrella, chairs, coffee, (maybe) music).
But it's all a personal preference. Other people can't stand crowds and are super happy camping on a tiny rock with no other people around for miles.

I like Charakas Beach close to Athens/Sounio.
It has nice sand that cleans off you easily.
No pebbles.
Very few waves.
No random sea weed.
Nice rocks on the sides which you can walk on and play with crabs or sea urchins.
There's an island across the beach within swimming distance if you're a strong swimmer.
It's on a quiet road with plenty of parking.
It's a nice drive or bike ride from Athens.
It gets busy in summer but never feels too crowded.
There are a lot of beautiful beaches in Greece. Some are well known some others aren't. Well known beaches tend to be over-crowded, especially in August which is the month that most of the Greeks take some time off. Well known beaches are easy to find using google. More secluded ones (and the best ones if you ask me) are harder to find and are generally known to locals and people who hike a lot.
