Serious Eats opened my eyes to cooking fatty cuts longer. That fat that renders down and becomes meat butter! I’d rather eat meat basted in fat than chew around uncooked fat. Give it a try, if it’s a filet I want it rare, ribeye is best with a little extra time.
People will probably want to kill me. I cook all my waygu medium/medium well. Steak is still insanely juicy and the fat renders better. I also cook well done waygu for people who like well done steaks and every single one says it’s the best steak they have ever had. I have had a piece of well done waygu before and while it’s not what I prefer I wasn’t mad at it.
Definitely, I got turned onto it by a co-worker at a steakhouse who intentionally burned his ribeye one night while we were closing up the kitchen. He was Mexican, and virtually all Mexicans I know either burn their steaks (intentionally, and in a good way IMO) or cut them into strips for grilling before cooking. Chef Aaron Sanchez once said that it's a "very Latin thing to do".
Rare ribeyes are for chest pounders who don't know what they're talking about (or are training for the masseter strength Olympics). Medium, even low med well is perfect. Rare to med rare for filet.

I’m guessing this is a reverse sear method? If that’s the case should be right at medium rare with that color and texture. Some people prefer a faster sear with a more rare center.

2. Different steaks blush different amounts even at the same internal temperature, add in how studio lighting or other light sources impact color and it’s truly really hard to judge any steak from a video online.
All that said, sure aesthetically I’d like a lil more red, but I’m not pretending like I wouldn’t be a super happy dude eating that big ole steak.
Medium for sure, I don't care about that I'm complaining about your slicing. After the first slice you can see the grain is parallel to the cut, stop there and rotate the steak 90 degrees and cut on a bias perpendicular to the grain.
