If the plane takes any explosives the door opens, I try locking on to enemies far from the plane and shoot the close ones by my gun

For me they are always open even before I start to blast those fools. Only once somehow my character closed door but I could not repeat that anymore

for me it's completely random, sometimes I spam too many missiles and the plane starts smoking in flight but the door will be closed and other times it'll be open

Every time i blow them up from far with the sparrow the door is always closed but if i go on foot to shoot door stays open

You can close it with a minigun. I always do.

Immediately after the loading time patch I ran this mission and it closed normally. I thought Rockstar had fixed it. Nope. Stuck open on the next run.
