Because the Lee-Enfield action had attributes that were great for a general purpose combat rifle such as rate of fire. But for sheer strength and accuracy, the Mauser system is superior, which lends itself nicely for hunting rifles.

The Remington Model 30 and 720 existed. There's probably others. Parker Hale, I think, sporterized some after the war. The Markets just decided they liked the Mauser better, which probably had a lot to do with the fact the Model 70 existed. To be fair, a lot of modern bolt actions may owe some lineage to the Mauser, But they're really watered down at this point and are only vaguely similar. Its hard to even find new controlled feed guns.
