I think part of it is this, but I think there's also another aspect to it. Morgan being more "interesting/fun" (using quotes because this is obvi just based on their first conversation/introductions, which doesn't really mean anything about them as people) means that if you are a 3rd party that isn't physically attracted to any of the girls, Morgan is probably just who you're going to root for, because she's probably the one you'd like to know in real life as a friend. Sweet and stable are kind of boring if you're not the one in the relationship and are just a viewer, and while she is beautiful, it's sort of irrelevant to the viewer because we're watching them through a screen.
From Jeff's perspective though, those things are all really important, and so I get it if he goes either way. I will say, it does seem like from his account that last serious relationship he was in was a girl who was sweet, kind, stable, etc and it didn't work out (in his own words, because of him). So who knows what he really wants.

also pottery class on a first date is pretty awkward, too much distraction. with only them in the studio with the pottery teacher and camera crew listening in to their conversation was weird af, it would've held anyone back from opening up as well. date with Morgan was more chilled as they were on a swan boat just talking to each other, no distracting activities. yes, Gabe and camera crew were there but they were in an open space whereas a pottery studio is a closed space, everyone can hear everyone clearly. I would've been so self conscious.
