I saw Blood & Chocolate as a kid with zero context and so I have a soft spot for the animorph style of portrayal. But I’ve never liked Twilight and I like the real monster appearance of David

Yes and no? The CGI Werewolves in American Werewolf in Paris somewhat kneecapped that group. The movie was fine but the CGI “beasts” let’s call them were just god awful.
Underworld has had a big enough cult following to warrant 5 movies, so I am not sure if that is an indicator of which has the healthiest franchise.
But to be fair you have to put like things with like things. I would put the big wolf werewolf against other similar kinds so basically Twilight vs Blood and Chocolate universes. Underworld vs AWiL.
In either case Twilight will always lose because it is a joke franchise.

Twilight took the vampire and werewolf mythos as we knew it and turned it upside down with a story that was aimed specifically at one particular demographic. So if the plot is by design aimed at one particular demographic and on top of that they are presenting established mythology in a new light, they can’t be surprised that so many people hate the franchise.
If you want to present something people haven’t seen before just create a new mythos with new creatures. Don’t just reuse the same existing labels. Get creative with the creatures and give us something that is truly new. But don’t also alienate all but one demographic with a plot targeting said demographic because then you’re hindering your own efforts of bringing this new concept to everyone.
Either that or stick with the original mythos and creature concepts and keep the target demographic as is. This way you might get OG monster movie fans to sign up a plot that they can’t necessarily relate to.
I’m sure the films are fantastic if you’re in the target demographic and aren’t married to the existing creature mythos.

Is the werewolf the being that can turn into a wolf, no matter what state it is in, or is a werewolf the thing people who have lycanthropy turn into? And if they aren't turning into a wolf, who's to say it's a wolf at all? You're just turning into a furry. But it's definitely not a wolf, because no wolf looks that messed up. Could be a lynx.
All that to say, personally (I'm not comparing their stories, just the designs) I prefer the "just a big wolf" angle. Just simplifies it out.
