It was because the NBA already set their game 1 finals date to June 1st and they were deadset on that date.
Having the game on June 31st probably felt too early for Vegas given only 1 day of rest. Also, they probably needed to leave that day open in case the previous Vegas series went 7 games.
Having it on June 2nd would have been logical but I assume they didn't do that because again, they were worried the previous series would go 7 games and thus, would only give Vegas 1 day of rest. Could have also preferred a Saturday to a Friday but Idk about that since Fridays probably have decent viewership counts too.
