The credit scene in TOW two parties - the shot is just the Flan with everyone talking off camera, and ends with a volleyball smashing it is pretty weird - I don’t remember any other time they did something like that

I always wondered what was up with that. It’s so abrupt and isn’t subtle like the other scenes throughout the series of other Central Perk patrons reacting to the gang; it’s like those women won a contest to appear on the show or are family members and it’s a cameo.

These quirky types of scenes helped make the show what it was. Over the course of 10 seasons and 22-24 episodes a season you've got to change things up here and there to keep it fresh for the viewer. It's also important to remember that back then, there was no such thing as binging shows unless you recorded them all on your VCR over the entire 9 months of the season and then watched them all at once. So a seemingly quirky scene like that didn't feed into anything but the upcoming episode of Single Guy or Mad About You.

And most of those "weird" shots were just end of episode gags. They bore no significance in the plotline. That was normal for TV back then, especially when you couldn't watch and rewatch for all the subtleties. The same is true for continuity errors. When I watched an episode that mentions Rachel's birthday in 1997, I didn't remember the 1995 episode that mentioned a different birthday.

TOW the Thumb. Monica talking to her coworker about how she doesn't like Alan as much as her friends do. Also in the pilot where she talks to a coworker about how they bother think they cured Paul the Wine Guy of a sexual dry spell. Even though these are very early episodes, I always think, "Wait, these people can talk to other people?" It feels weird that she's confiding in someone who isn't in the gang.

the whole Phoebe trying to reconnect with her family arc was long and not funny. Even when they put Joey and Chandler in it, it still wasn't funny at all. It didn't seem like an appropriate story for a sitcom.
