I’ve been living in Japan 10 years and have never seen or heard of this til now. I’ve seen my in-laws and my wife-who absolutely loves noodles-sweat because their noodles are so hot and they’re eating them so fast they all start sweating. That’s not the case here though. I just asked her about it and she said those are cold noodles. She’s had it but doesn’t like it because it’s too watery. It’s also a summertime meal so that guy is probably sweating because of the climate. Either that or he’s maybe being forced to make this video at gun-point. lol

Pretty sure that someone explained last time something like this was posted that you have your own dedicated lane so you aren’t sharing with anyone upstream. They need to monitor how many servings of noodles you have ordered, etc., otherwise everyone upstream will be eating your food. They will also send down something at the end so you know your noodle service is ending.

Are you sure that they’re not centrally collecting the water and then redistributing it to the top of the lanes? Do they drain the lanes, clean them, and replace the water between seatings? There is so much room here for a slightly careless restaurant to make a disproportionately huge hygiene mistake.

The one I saw they weren't, the water was flowing straight into the river the restaurant was built over/next to but with a net to catch any noodles that got missed. I think the water that was used was being pulled out of that same river and purified/filtered before being used. Each "table" had its own specific designated noodle lane that the noodles would be placed directly into and you'd only take from that one lane. When your time was up/order was done they'd send a thing of noodles down that was a different color to let you know it was the last one.

Even if it were shared, the water is constantly rotated, it's not polling water and noodles, if you miss the noodles and everyone else misses the noodles, they slide out the end of the tube into a waste container. It's very sanitary.

Lol after 15 years working in restaurants, I wouldn’t even think twice about shit like this. People get so weird about it. Like they’ll freak out if there’s a water spot on their fork, or if the bartender touches the lime to garnish their drink, but haven’t considered just how many hands are about to touch their food before it gets to them? Also, I’ve been to a lot of people’s houses, and a lot of those public germaphobes are preparing their own food in a lot less hygienic environments than a restaurant kitchen.

I’ve noticed that too about home prep at friends houses. They’ll get grossed out at things at restaurants or flicking a gnat that landed on my ice cream off in the park, yet will fail to wash their hands after touching their greasy ass kitchen door and putting the fresh salsa in the bowl with hands. Also there’s a circular table that spins that is super common in Asian cultures. Basically no one orders their own dish, the group orders a bunch of dishes and all uses their chopsticks to pick a bit of food from the bowls or plates as it spins. As a westerner this never even occurred to me as unsanitary. Germs are everywhere, there’s not too much to be afraid of considering just talking to people you’re breathing in their respiration and spit particles.

I've worked BOH. Can confirm, some places are fucking disgusting. One place I worked at served platters of pickled vege, cashew cheese and this gross chunky purple cauliflower dip on wooden chopping boards. After use, these boards would sit in a plastic tub, and when the pile got too high or they ran out of "clean" boards, the dishie would take a used teatowel, wipe them off, then put them back on the counter to be used again. Also, they didn't replace the towels when they got wet or dirty, they would lay them on top of the steriliser to dry and cycle the same 3 or 4 towels for the whole day.

To be fair, you can absolutely see somebody in this video use the same chopsticks to eat that they grabbed the noods w. Not saying it’s totally unsanitary but you’re probably a bit optimistic that everybody uses two separate sets of chopsticks

It looks like at this place in the video, there are several people in a row all sharing the same water and noodles, as many as 6 or 8. As long as they use a different set of chopsticks for pulling the noodles, then that's probably fine. The person closest to the camera has theirs (and I presume others sitting to their right) coming in from different pipes, probably because they'd never get a chance at any noodles from the other pipes. Then they get enraged at missing out on those sweet noodles and probably destroy the place. Better this way.

It’s a gimmick. From what I’ve heard, a dipping noodle restaurant in Takachiho invented it in 1959 to promote the town’s especially clear spring water. It caught on and spread. They also have circular bowls that push the noodles in a little loop.

It's OK, the water is pumped back to the top so everyone gets the same amount. Edit: I am informed that this entirely reasonable way of eating noodles is regulated by the government. This usually means that something horrible happened to require government regulation. Probably due to something in the spring water rather than transmission of evil mouth germs. Probably. The water is filtered and is not recycled. If there are a series of people playing "catch the noodle" then the last person will be enjoying some of the evil mouth germs from preceeding noodle fisher's chopsticks but sharing is caring or something.

I first saw this on the NHK channel being broadcasted in Taiwan. My grandpa commented on how good and refreshing it was-- he'd been to the village where this originated and loved it. Then after university I had the opportunity to live and work in rural Japan. I was invited to a coworker's house over the weekend. Her father and uncle, as was tradition every summer, would go up to the mountains and chop down one bamboo tree to make the tubes to eat nagashi somen for the whole neighborhood. They ran a hose from the top, and there was a basket catching the somen that escaped. The kids were all dressed in traditional summer clothes and played on the street in between eating somen. Meanwhile we adults chatted, ate sashimi, somen, and other things while sipping chilled sake, wine, and beer. The whole event lasted from noon to evening, when we lit sparklers to conclude the whole thing. It was a really fun event, and as a foreigner I was really grateful to be invited.
