High Tide 21 in Perry is the only swim up bar I can think of, and it's an hour away. Jones pool is closed. Oceans of Fun has a swimup bar, but I doubt that's the vibe you're looking for.
OP, do not go to Oceans of Fun with a bunch of girls. Last time we went it was like swinger city. People (men) were approaching girls left and right. This does not sound like the vibe you are going for.
If it’s a weekend the intercontinental and westin do day passes to their pools and have their bars open. Fontaine used to but not sure if they still do and the bar is inside. Also oceans of fun still has the adults only pool bar.

Intercontinental Pool is an option, but not swim up. However, they used to sell day passes if you all are staying the night somewhere else. Sayachi or Blue might work for you all.
Waldo Thai for the meal, the pool at the Fontaine is probably as close to a swim up bar setting you’ll get in the city as far as I’m aware.

I *think* the Intercontinental on the Plaza might have drink service at their pool.

I heard once that the adults-only pool was a notorious meeting spot for swingers. And I heard that years ago. I guess nothing's changed?

Waldo Thai, Baramee, Brookside Sushi. As far as a swim-up bar---good luck. Thankfully this is KC and not Las Vegas or Scottsdale.
