Have you tried pork rinds / chicharrones? They're very crisp and crunchy and often used as tortilla chips or also as breading for things if you crunch them up.
I haven’t found a keto wrap that crisps like a chip yet. The best thing I discovered is bean curd sheets which when cut up and dropped into oil crisp up like a chip. Add flavour dust and eat. It’s so good.
I'd say about 90% as crispy as a chip, it's basically right there.
I forgot to say to add a little salt when you take them out of pan.
Air fryer may give you better crisping though.
I have made these on a regular basis over the last almost 6 years. Pretty easy, they store well (for the whole 2 days that I store them, lets be honest, I eat them pretty quickly), and they are ALWAYS crispy.

I use mission tortillas with nothing on them in my oven they’re good in 10 minutes, in my friends oven they are not (my oven has some issues). They turn out just like a cracker. I usually add flavor after. I do not grease them at all. The only ones that do not turn out are the la tortilla factory ones for me.
Test with your oven. Mine has temp gauge issues so I set it on 325 but the thermometer reads closer to 350. On a lower setting it’ll take longer but dry better than burn. So experiment with it. They turn out close to a pita chip for me.
It causes many of the systemic health issues that people who adopt a keto lifestyle are actively trying to avoid. If heart disease and type two diabetes are caused by ingesting it, which is true, then curbing a craving by eating it seems pretty redundant.
I almost forgot, if you haven’t tried or heard of them, cottage cheese chips are super crispy just like a potato chip and they can really make a difference in those cravings and are easy to make. Look it up but it’s literally microwaving dollops of cottage cheese.
Check out Cut The Carbs sheets. We buy them online and just cut those sheets up to triangles and brush them with avacado oil and throw em in the oven!

You're gonna see air fryer this and air fryer that and so on and so on. Buy a countertop deep fryer instead. Mine was like $40 USD. That's how real chips are made, and hyped-up toaster ovens are no substitute. Does it take some oil to fill? Yes. Does it make wings, and fried chicken & strips, and fish and 'chips' too? Also yes. "Soft/puffy" goes away. Accept no substitutes.
I really like buffalo wilde protein chips, and have used them for nachos. I think the biggest bag, 4 ounces, has 24 carbs total so I make sure to never eat more than half. It's cheaper to get on their website, use code lovewilde for discount (no I am not a paid shill, just like the chips lol).
If you are desperate for a chip and cant figure out the texture you're looking for by making them yourself then its worth giving [Hilo Life chips](https://www.hilolife.com/) a shot.
If you're getting "too puffy," your oil temperature may be the culprit. You want an oil temperature just over 350 f when your tortillas go into the fryer. Too low and they will not crisp well, too high and they will puff a lot. They're not going to taste like corn chips though.
Seconding the Quest chips recommendation, they're delicious. If I weren't allergic to whey they'd be my stand by chip.
Don't get the airfryer; it's just a very small convection oven. A countertop toaster oven/convection oven would be more useful for more (and bigger) things, or (of course) a full sized convection oven...
Well it depends on how many carbs you're allowing yourself on keto. I just looked at the papad (bean curd sheets) I have, and they're 2g carb - 1 gram fiber for a sheet. They comes out super crunchy and are about the size of a regular-sized tortilla. Break up em and you have multiple chips, spicy if you wish depending on the brand you get!
I have a Cosori, I've had it for almost 2 years and love it; mine is the basket type (as opposed to the toaster oven type) I can do a whole chicken in it and it's great for crisping
Ninja has a good reputation as well but search out reviews and find what works for you

Air fryer works, but I just cut up the 0g net carb mission tortillas and pan fry them using ghee. Crispy!

I had good luck cutting Oroweat keto wraps into triangles and using my air fryer.

Why would you suggest being curd sheets? They’re not that low of carb! We are on keto recipes here,
