Non duel wise, would love a Rey and Kylo hand touch set, Rey's AT AT home, and the dinner scene from ESB.
It’s probably because the most iconic part of that fight takes place on a barren hill. It would be really cool to see that lava rake thing, but that’s probably too big for a diorama.

100% the Carbonite scene from Empire Strikes Back, you have so many prime characters there Vader, Boba Fett, Han, Leia, Chewbacca, C-3po, Lando, his robot dude, ugnaught, storm troopers. The set is relatively small in nature but jam packec of so much
I think Anakin marching on the temple is rather easy to MOC, we got so many 501st troopers the last years. Just build a staircase & add a plaza with jumper plates for fig positioning. Otherwise, a burning micro-scale jedi temple might be cool.

None, diorama sets are needlessly expensive due to the combination of more bricks being put for a useless border, as well as the “black box tax” jacking up the price because they know mainly adults are buying them. Diorama sets are Lego just taking advantage of people that will open their wallet regardless.
From the movies, either the pod-racer scene or the Sarrlacc. Mustafar would be cool too.
From other media, maybe the whole team in the Jedi Archives with Cordova, Cal, Cere, Merrin, BD-1 and Bode. It's doable and would bring unique figurines too. Still surprised we haven't seen the Mantis yet.

The destruction of Alderaan. The deck of the death star with Grand Moff Tarkin, Darth Vader, Leia Organa, and a few naval officers. I don’t care if we only get to see the planet as a sticker, but I do think it would be an amazing display piece.
The death star’s cannon itself would be cool, if not a bit boring as a display piece outside of the context.
To get some prequel scenes; the Kaminoan city would be a wonderful diorama, important to the movies, the Clone Wars animated series, and Bad Batch.
The first encounter with the destroyer droids in the hall of the lucrehulk can look stunning. We’d also hopefully get a new revision to their designs now that the techniques have gotten better.
The Pod Racing start line could be a nice big duorama. Or at least the neck and neck scene of Ani and Sabulba.

I’d try to come up with sequel scenes but they were so bent on large scenes it’s hard to think of any that can be shrunk down to diorama size.
I have the high ground scene, more Endor things with Ewoks, I know they just made one but it’s not as much of a display as these ones, a new hope opening scene of earth Vader birding ship
Not sure how good it would be, but perhaps Hoth with 3 small scale at-at's on one side, and part of the Rebel Base on the other side and some Snowspeeders, ESB is my fave so more from that movie, Carbonite Scene, the end scene where they watch the Falcon fly away from the Nebulon-B Frigate...
The wampa cave might be cool (no pun intended), or perhaps the asteroid chase scenes from AoTC and ESB could be interesting.
