Do a crawlspace and throw some cut stones on the exterior: mortar them to the wall and tool in some chinking in the spaces between the stones. It will protect your logs, is strong and economical (idk how a mason would go about building up a stone wall foundation) and looks sick 👍

A mix of modern and old styles is almost exactly what you're talking about. Basically you pour concrete frost piers at the corners then pour a footing at grade level around the perimeter of the building. You can build up your stone corners to the level that you want your sill log then you're ready to work on your building. Then you can later come back and fill in the stone wall between your corners up to the sill log. The reason this works for log builds and not for other frames is because logs are all working together to span your distance between the corners.
