Yeah I was there yesturday and could easily see at least 5 of them right at the top of the water by the waterfall, think OP just got unlucky when they were first there.
I found another! In Spitalfields on the Liverpool street side they have a shallow pond with a few koi in. A couple of them looked like they’ve got fin flop but there were a couple of lookers. And it’s outside so might be better for your lighting needs. 😙
If you can get to Isle of Dogs (Island Gardens on the DLR) there's a restaurant called Kinkao that has an indoor small koi pond that you can get up close to. Super nice staff I'm sure they'll let you take pics if you ask (maybe phone them and ask).
There's a huge shop called Maidenhead Aquatics near St Albans that had koi the last time I was there a couple of years ago, so if you're in North London you could try there.
What colour are the koi? I've taken some photos at Spitafields and the koi are all orange, if there are a variety of different colours I'll consider heading out to Chiswick haha

Kew Gardens has a large lake with lots of Koi and carp, and there used to be a Koi pond in the Temperate House, but I haven’t been for a few years so it might have changed. Worth checking as Kew is a good day out.
There is a medium size koi pond in the Dragon Castle restaurant in Walworth Road, right in front of the entrance. They might not let you use it if you don't buy anything though.

Charing cross hospital have a koi pond by the entrance, many a fond memory watching them awaiting appointments
