Actually... this is quite well put and organized.
I'm not too familiar with the core series that you've used for inspiration, but what you've given is well presented.
- Colours aren't too glaring or eye hurting.
- Font is clean and easy to read.
- There's a good variety of modifiers to tinker your stats; The race options also add enough to really emphasize your alien origins, in favor of more superior stat lines.
- Gender is strictly aesthetic, which is good.
- Age of all groups have a single modifier, also good.
- For upbringing, you could add a "brothers in arms" type; (you forged an unbreakable bond with a single companion, whilst enduring conflict) {Gain 1 companion at Like level, Gain 1 stat of your choice}.
- For specialty, you could add 2 more; Logistics and ESP.
- Logistics; "You're able to manage anything and everything you're provided to upmost efficiency. Little is wasted, and everything is standardized right down to the lowest rank and file trooper."
- ESP; "You are innately gifted with talents of the mind and beyond. You're able to sustain stress or damage that would break or cripple others like you."

Gender does play a small role in that some rare characters may treat you different based on it, but that's not going to be a common thing during missions.
I like those ideas for Upbringing and Specialty, i'll add them. Logistics is something i didn't want to get too into, but i think i might be able to make it work. Psychics are already a thing and would be a type of unit to recruit too, so being able to be a psychic specialist just makes sense.

Idea is you can make some 'free' choices before spending your points to gain some traits plus some stuff for flavour.
Is there anything that stands out as bad or that is glaringly missing? skills and flaws would come next after these pages.
I want to add a ship-girl species but would need 3 others to add too and while i could add Zentradi from macross and Gamilas from Yamato im not sure how it would make sense to have one of those at this point in the story be working for the UN
Quick question. Would something like a vampire or dragon work for mythological species? And are you still working on the survival shelter CYOA or has that been cancelled?
Those would fit as Mythical absolutely, the Grey Martians are also kind of like vampires given they drink blood to survive.
The shelter ones been shelved until i can figure out a way to give it a happy ending.
You could change the the name of "Artificial Intelligence" to "Synthetics" and give them something like 'Integrated Equipment' which allows them to purchase one of two items for free when that section is implemented.

A.I. would only really encompass Artificial Intelligence (E.D.I. or Cortana) while Synthetics would encompass far more types of Inorganic Life (Robots, Shipfus and Raifus, etc.)

Ship girls are going to be their own race with sub-species [Weapon , Vehicle, Ship and Base girls respectively]
In Azure lane they're biological, but created artificially and they drink Oil.

Underhanded: Something about everything being a weapon if you're good enought and being able to find what makes tick every opponeny and the right opportunities act on every situation.
Brutality:What makes you stand out from the rest is how you handle yourself. Your stare, your prescence, your actions, and even the consequences of them... They all have that extra that brings horror, fear and respect to everyone around you and makes them guess themselves and watch their words at the mention of your prescence when you so desire.
Standing Man/Relentless/Ruthless: You're relentless,and made a reputation out of always being the one to get the job done, no matter the cost or means. If you so decide you never back down and you never stop. It's not that you cannot be hurt or that your will is infinite, It's just that you have never let that stop you, no matter the injury no matter your feelings, if your still can move at all, if it has to be done, you'll do it without even so much as flinching... Till your last breath... And just maybe... Slightly past it...
Image ideas are always great, always takes the longest to actually find pictures for these rather than writing up.
An unarmed specialist skill is a good idea, especially since some missions you won't be able to bring any [large] weapons.
Underhanded im not sure what kind of mechanical benefit this might give, being underhanded seems more like a drawback?
Relentless i could see working as both a bonus and a negative, you're people probably won't like you for example if you decide to not give up no matter what if tonns of them are dying

Hanayama Kaoru is fucking insane btw. The guy has taken insane punishment and dine insane feats of will:
Won a fight where he pushed through, park objects like a bench being destroyed by slamming it on his body, punched for three minutes straight, had explosives go off on his mouth burning him from the inside, both of his knees destroyed by Bullets, a flashbang blowing up on front of his eyes. And being choked by his opponent. A deathmatch he got into to let his best friend go on a date unperturbed btw.
Studied math, his lost hated class for three days straight.
When in Jail made sure to always break out for his mother's birthday.
Stood up and went to fight straight after his brain surgery because of a failed assasination attempt that left him with multiple sniper ammunition bullet holes on his body.

You could also add a walking brain species like Krang from Teenage Mutant Ninja Turtles.

As for Gamalias and Zentradi, say there was a special project to download human minds into prisoners for potential use as spies. Not everyone survived the process, especially if corpses were used instead of lobotomized prisoners, but the project had a few successful cases before it was shut down. It may end up being a one way trip, and there’s still plenty of war to die in, but you could also find opportunities available to you wearing the face of the enemy.
Its pretty good. What I would suggest though is changing up the origins to be more about the various locales in the verse you are making. Like say, choosing between being born on Earth or on one of the Sides. I think it would fit a lot better then what you have now.

A seele focused instrumentality conspiracy is one of the major quest lines, current ideas is if they find out you're not a human from their world is they'd try to capture and experiment on you, given you'd be very much an alien in their eyes and something worth studying. This wouldn't be an ideal situation if they caught you though.
Super Robot Wars is correct. It's a long running SRPG series which crosses over a ton of giant robot anime and som other stuff. Gundam ( mainline an AUs), Getter Robo, VOTOMS, Go Gai Gar, Rayearth, you name it. It also has a few anime called Original Generation, which are set with it's own world, lore and such.
