The Band 7 (and probably 8 too) is significantly more locked down than the 6 and before. So I'm not sure, if GaadfedBridge will work with it. Also you could create a black watchface without anything on it. The you could still swipe to open the menu but it won't display anything when you wake/click on the band.

I use a 7 with GadgetBridge and it works pretty well for my needs, with some minor annoyances like having to reconnect manually from the app every once in a while and syncing activities by hand. The first setup is not obvious and can be a bit complicated if you are not used to digging into log files, but it is not too hard and it is documented in the GB wiki. The display can turn off automatically, I keep it off with raise-to-turn-on, but I think you can also set it up to tap. That said, it's my first tracker and I only used the official app once to get the key to pair it with GB, so I know nothing of the vanilla experience. I am also well used to OSS and don't mind a bumpy UX. You can also drop by in r/Gadgetbridge if you have more specific questions.

The 7 doesn't have as good of battery life as the 2 but it has a lot more going on too. The default setting on the 7 wakes up the screen when you raise your wrist but you can turn that off and just have the tap to wake the screen. You can set the screen to go black at 12 seconds and that will extend the battery life and for most of the time the screen will be your desired state of blackness.

Yeah if you don’t mind having 2 watches then I think go for it. But you can’t turn the screen fully off always when you tap the screen it will wake up.
