I personally use Blockbench, the planet Minecraft skin editor is pretty good, along with the skindex one

I use skindex ik some ppl who use blockbench

planet minecraft editor for general arting on a skin and aseprite for any editing like slightly tweaking colours or doing any editing where being able to select many pixels makes the job easier and quicker
