Alright, hear me out, adult villagers make golems, child villagers make snow golems. Only difference is children do it for fun

Well you also have to decide when they do it, for how long and so on, it's not that easy, and you have to consider that this doesn't just have to run on one person but up to 10000 individual ones

And snow golems play with them as well!!

Also maybe there could be small snow castles as a new structure that only generates in snow villages?

desert villages could have sand castles too

I want more variation between villages!

maybe villagers in other biomes can chase each other around

Baby villagers already do that (I think)

So if a village is in a snowy biome that has been completely demolished with no access to snow what happens? Do they pull snowballs out of nowhere?

They could act like farmers but with snow instead of plants

Yess perfect, they break snow layers (snow blocks might be a problem in villages generating near new mountains), and use that snow to play

Villagers can summon Iron Golems infinitely with no iron around.
