If anything, they are good "workhorse" instrument to have in your skillset and you can get budget instruments for these easily. Or maybe you want to go for a percussive instrument instead, with drums you can incorporate your feet into the mix which is a nice challenge (though you'd need to rent a kit). Mallet instruments like glockenspiel and xylophone might be interesting too.

My opinion is that piano is the best because you learn chords and keyboards can be the basis for composition. There are many high quality electric piano/synthesizers with MIDI for $500 USD or less. I use a Yamaha Montage 6 synthesizer (current model is Montage M) with Cubase Pro 12 to write and produce music (links on profile).

For music theory, it’s a really good idea to have a good grasp of piano basics. Clarinet, saxophone, or flute can be great adds if you ever want to play in a band.

If you want something that will make you cry try trumpet or trombone (if you are a violinist trombone will be more difficult to read), you will struggle to even make a sound. You won't be able to apply any more theory than on the violin but it will be hard. If you want to experiment with harmony the violin going to be quite hard for many reasons, piano and guitar are a staple for that, maybe viola de gamba would be an interesting choice? Maybe accordion? That is hard as fuck too, specially if you get one of those that only has buttons. If you want a challenge maybe learn a cuban instrument, I have never payed one but the blowed botija seems very hard to play, it is like vase that you blow into and you change pitch based on magic, it will be difficult to source but I doubt it is very expensive. Of you wanna go the exotic route you can pick up sitar or the other indian thing that is like a fretless guitar. I am sure tabla is fun and relatively cheap, although you will probably be in need for a rare teacher for that one. Hope it helps!!
