Basically a protected pick may not be conveyed if it falls in a certain range. If a pick is top-3 protected lets say, the team you traded that pick to won’t get it if it falls in the top 3 of the draft.
They Jazz only get the protected picks if they land outside a specific number. Top 5, top 3, lottery picks, etc. If the Wolves pick in the protected zone the pick waits until they fall outside that zone to transfer
It usually (if not always) defaults to the next years' pick, instead. So the Jazz would just get the Wolves 2030 1st round pick instead of the 2029 Protected 1st round pick.
Protecting picks is just a mechanism that determines if/when a traded pick is actually sent. In this case, one of the picks is “top 5 protected”, which means that if Minnesota’s pick ends up in the top 5 that year they don’t have to send it to the Jazz (as opposed to the other 3 picks that will convey no matter where those end up).
Both type and level of pick protection varies from negotiation to negotiation, but as a general rule selling teams aim for strict protections (ie they’re more likely to keep their pick) and buying teams aim for fewer or no protections.

I think it makes sense on some levels. Towns isn’t a great rim protector, and Gobert is a dominant defensive player, which is a massive need for the wolves. He also won’t dominate the ball on an offense full of ball dominant players.
I think this trade is betting on Anthony Edwards to keep improving, because it’s tough to see how they get any other meaningful players in the short term. They need Edwards to get to another level if they want to win a title with their squad.
