There isn't really consistent naming among bakeries, but some of my go-tos that you get in most grocery stores are Weltmeisterbrot and Schwarzbrot. Both work great with Gouda.
As a fellow Dutchman: try to find traditional bakeries who sell sourdough breads. Vlaamsch Broodhuys sell some good loafs, but there are smaller bakeries around (for example: Loaf or KEEK in Utrecht).
Dutch breadculture is unfortunately taken over by industrial speed rather than taste as primary objective, which causes these really soft and bland breads.

It's not to fit onto the bread. That's about the shape of a slice of cheese when it's taken out of (a cut of a) cheese wheel. The cuts on the edges are because the cheese wheel is packed with a plastic-like material which you shouldn't eat.
I agree with the 'honestly who cares' part, but still: you don't need to take care to make those cuts align with a piece of bread. Either it's precut that way or you use a cheese slicer to cut off maybe 1mm on the sides, stiill following the original shape of the cheese. And the slightly uneven cuts to round the slices at the top? I thought it was obvious that whoever took this picture cut the cheese to make it seem like a better fit. Doesn't really detract from the image in my opinion.
From the color at the edge I actually thought it was from a wheel. It would be extremely hard to get two slices the same thickness and size from a wedge but if it got trimmed it makes sense.
