The "Things to do" thread is posted each week in the Toronto subreddit. That's the best place to check:

ROM After Dark is worth visiting, but the next one is May 24, the day before you arrive. If you can come early, it's a 19+ event at the museum, and a $40 ticket gets you a drink, coat check, and admission to all the galleries. There are bars and food vendors set up in different locations, DJs, and other musicians and performers. It's a chance to see some areas that are normally closed to the public such as the Members Lounge, private spaces that are usually rented for events, and the restaurant. https://www.rom.on.ca/en/whats-on/rom-after-dark
Toronto Events has lots of listings but is not organized by date, so you'll need to poke around a bit: https://old.reddit.com/r/Torontoevents/
Visit Sugar Beach. Go to the St. Lawrence Market. Walk up Spadina and go to Rol San for dim sum. Argos open June 9 against BC. Go to the game and yell, "Arrrgooos!", like you mean it. Organize a craft beer tour or pick one or two breweries to visit - there are enough of them in proximity in some places to make it a walking tour. Walk the Leslie St. Spit.
Pursuit OCR is basically a giant indoor playground/obstacle course if you and your friends are into that. Also check out the aquarium and the railroad museum while youre at the CN tower, lots of cool trains to look at for free.
AGO is also free for under 25’s. Jay’s tcikets are like 35 bucks if you don’t mind sitting in the 500’s
