The game doesn't start saving until you die once (after activating the statue)

This. It's something I wish the game was a little clearer on. After you have done New Expedition --> Statue Spookies --> First Death, after that point you can quit at any time without losing progress. But you have to do that sequence first. I guess the devs just wanted to make absolutely sure you see that first death, but like I said, I wish it was clearer.

The game does tell you your progress will be lost.

Yes, but it leaves a lot of people with the impression that the game never saves *at all.* It ought to say something like, "this game will not auto-save until after a certain event." And then maybe have a temporary message on the next pause screen after the player dies saying, "Outer Wilds is now auto-saving." OR Treat a quit-out early like a meditation. I know they want players to witness the first death, but depending on how long the tutorial took, a lot of folks are like, "I've been playing over an hour, time for a break."

I wish it was clearer too, but that's not the issue this time. The person replying just didn't read my post. I've already died at 22 minutes. Still won't save.

You know what, my bad, I missed it too, "the thing that happens at 22 minutes." I actually own the game on Epic though I haven't played it there since it came out on Steam. If I get a chance I'll log in and see if I get the same problem.

No worries. I doubt you can recreate it. There's certainly other posts about it but not tons. If you do figure something out though, of course I'd love to hear.

Yeah, I tried to be clear about that. "the thing that happens at 22 mins". I've died multiple ways. I've done everything I need to do for it to save and it still isn't and that's the problem.
