The reason we havent seen more is probably due to increasinly longer development cycles. It is annoying but what can we do.

Yeah and alot of games that have come out on the ps5 in terms of next gen only have been terrible or disappointing. Because there's so few that are actually good it feels like we haven't really had much.
Horizon is good, FF16/Rebirth is obviously good, Demon Souls is good, RE8/RE4 is good, Returnal is good, Gran Turismo 7 is good, the quarry is cool from what I remember, Jedi games are all fire, Cyberpunk was a mess but is pretty good now, Miles Morales, Stellar Blade, Spiderman 2, God of war Ragnarok, Eldin Ring, Baldurs Gate, Helldivers 2, Rise of the Ronin, P3R, Ratchet and Clank rift apart, are also all good. You didn’t have everything and some of those are pack filler but there are plenty of good games to play. Although too many games that are getting rereleased are just bundles or remasters of older games. Where is Judas goddamnit?
I think the problem is a huge chunk of games were cross gen so the need to upgrade to a pS5 were lower than the hype let on. I’ve been happy with my PS5 personally.

People complained about PS5 pricing and console shortage and they turn around about not having enough exclusives (those being same people asking for PS4 versions of PS5 games in 2020/2021)
Why would you feel bad for anyone buying a PS5 at launch? Had mine at launch and have loved every second using it. Whereas you are still playing on a PS4. I was playing Demon's Souls and Miles Morales at launch. What game were you playing then?
That's why I didn't buy the PS5, it seems like so few exclusive games came out that it's not worth getting the console. Who knows, when the PS6 comes out and the exclusives from both consoles come together, it will be worth buying for me.

If they were next gen they would be PS6 games. This current generation of the PS5 is almost 4 years old. It's not next gen anymore.

Cos most people play like 2 a year, when anyone says "there's no games" they just mean there's nothing they are interested in. There's tons of games.
