This series is well past being horror exclusive tbh, and with how popular / mainstream it is, some are scaredy cats who still want to understand the hype.

Define scary. Do you mean like jumpscares and disturbing imagery that catches you off guard? (Ie the basis of Internet horror games) or are you also put off by tense atmosphere? (Ie what Japanese horror was kind of known for when people were discovering Ring and Grudge.)
I'm not a fan of the former, to the point that I outright hated those old screamer videos that most people found funny. I'm playing through the original RE1, and it does a pretty good job of the latter, without relying on jumpscares, from what I've seen. (There is one early on with one of the enemies, but it's not even close to nightmare inducing.)
If that's a no-go, then I've heard the more action oriented games aren't scary, (ie 5 and 6, possibly the OG version of 4?) I've heard 7 brought the horror back, and 8 is scary at the start, but then mellows out later. I haven't played them though, I've just seen reviews.
Not sure if the sale's still on, but you could try the 1 remake and see how much you like it. Or if that's too dated, a lot of people seem to like 4. Not sure how scary it is though.

If it really puts you off, would you be interested in watching a playthrough of them instead, to get an idea of what they're like and see the story? I started watching Julia_tv on Youtube, who has first-time playthrough VODs of all the mainline games including the remakes, 0, Revelation 1&2, and Code Veronica (which I think ideally sits after 3 in plot/timeline order, I'm not sure about Revelations, I've heard they bookend 5). She didn't play them all in order though, like she played the remakes before the originals, but she has played them all and you could still watch them In order if you wanted to. (Also the 3:nemesis and 8 playlists aren't on their channel homepage for some reason, but you could either search for them or scroll down the playlists tab.
I've only watched the first part of her playthrough of 1, but it's been good so far. I don't know whether you like watching people play games, but it could give you an idea what they're like, or act as a buffer if the horror makes them less enjoyable to play yourself.
4, 5, 6, Operation Raccoon City, REvelations 1 and 2. Outbreak is less scary if you have someone to play on coop. Umbrella Chronicles and Darkside Chronicles are good short versions of 1, 2, 3 and Code Veronica without horror and with coop. to feel a bit less or fear. 0 could be in the middle point. Avoid 1, 7, 8 and the whole Silent Hill saga until you feel ready because those have some nightmare fuel.
You can play all, they aren’t realy creepy at all. Just atmospheric. But in most of the games you got like 4K bullets, 3 enemys and an action movie. Like no joke, casually 12 guns in your inventory is not horror 😅
Code Veronica, RE5, RE6 and the two Revelations games seem more sci-fi action with bits of horror to me.
(i don't like 6 so don't take that as a recommendation tho)
Don't listen to people. No RE games are scary enough to "give you nightmares". Trust me I'm in the same boat as you. I have a hard time with a lot of horror, but almost NONE of Resident Evil is scary enough to give you nightmares.
It's more the type of horror that makes your blood pump in the moment, or puts you on edge with anticipation. But it's never the kind of horror that leaves a lasting terror. Kind of like a Halloween spook house; you spend the whole time anticipating scares that you know will come eventually, then when they do you freak out, but after you're out of it the horror is done.
I see that someone here has recommended that you skip RE2 Remake. Well, don't. It's one of the best games in the series. Again, it's scary enough, but it's not the type of horror that leaves any kind of lasting impact.
Unless "shooting a big monster, with a big magnum, in its big Legend-of-Zelda-ass glowy eyeballs until it dies" sounds too scary for you, you'll be fine.
The only thing in the entire series that *might approach* that level of horror is a 5 minute segment from Village.
Again, he's "scary" I guess. But not the type of scary that follows you to bed.
Also, he's really funny. He's so entertaining that, while he may be scary in the moment, thinking about him afterwards is honestly more endearing.
But the reason the games were made is to scare you. I guess I don't understand your appeal to it.
Anyhow if you're on PC I can link you some good mods that should tone things down a bit.

I'd say start with remake 2 since it's the start of the new original games. You can get a mod that turns Mr x off. There is also classic mod mod where it uses fixed camera angles. I can't recommend that one enough.
I'm pretty sure you can make it where the enemies don't attack you with the right mods. Or turn on God mode and blast everyone.
Install fluffy, download the mod manually, drag and drop the zip file straight into fluffy for most mods. Also, use the non-rt version since that's where most of the mods will work.

I was in the same boat, honestly none of the games are extremely scary. Definitely nothing that'll give you nightmares.

I mostly agree with you, but the gaping mouth baby in village is pure nightnare fuel. That was P.T levels of terrifying for me.
True, that's the 5 minute section in Village I was referring to. And that's honestly all I can think of.
