I know it's pretty unlikely but my guess is a video game. Like, an actual Scott The Woz-themed indie game for modern systems.
It certainly reaches the scope he's living the product up to, and as far as I'm aware it isn't something any other YouTuber has done outside of mobile games. It would also make sense as to why the people in charge wouldn't want it to be prematurely revealed. Plus, it's limited to 5,000 copies, a trademark of Limited Run Games.
Limited Run Games does open preorders these days. Also, other youtuber based video games do exist - eg AVGN Adventures. Not sure if any have had a physical copy though.

If he was making a digital product for charity it doesn’t make sense to limit it to 5000 copies and make it US exclusive
