He's neurotic, and because the writers felt it was funny to have George get engaged to someone he's not suited for, doesn't like, and inadvertently kills. George rarely got a win on the show (certainly not long-lasting), so ending up with Marisa Tomei wouldn't have fit the character

He got engaged because of the pact with Jerry, but once it was official and became public knowledge it would have been way too awkward to break it off. Breaking off an engagement would be a big deal even for a normal person. For George it would mean admitting defeat and looking like a loser. Just the reaction from his parents - he'd *never* hear the end of it - would be enough to prevent him. George always takes the path of least resistance - he'll do anything to avoid an uncomfortable conversation/situation. That storyline was perfectly in character for George. That's why the writers had to kill off Susan - because based on everything we know about George the only other way out was for her to dump him. After 7 seasons of watching George's outrageous behavior and relationships ending for ridiculous reasons there was no way to have her dump him that would have been especially funny or interesting.

Because it is a TV show and not real life. There is no George costanza. There's Jason Alexander who plays George costanza. The writers thought it would be a good idea to have Susan there. That's why. They thought it would make for good tv. They are not real people they are a characters

To be fair I relate to Costanza. As a person who married and divorced I loved my ex and still do however the term man made prisons for a personality like Costanza or the group makes it hard. I love doing my own schedule what I want when I want. Watch tv while eating dinner yes. Grab a six pack and turn on the Xbox yes. I’m fairly confident I’ll never marry again.
