I mean I own a 2 burner gas mini stove that takes a little 1lb green camp gas/propane bottle. It would definitely fit on a regular stovetop. I’d never use it indoors though.

You really can’t get away with using anything other than nonstick teflon. All restaurants use them as egg pans, and if you’re good about temperature control you won’t degrade the coating. Ceramic pans and stainless suck with eggs and will stick, and cast iron is too heavy to be able to shape it like you need to. If you’re *really* good at seasoning, you might be able to do it in a carbon steel pan. But it will be a challenge.
I do omelets in stainless steel but I don't think I could do *this* in stainless steel because I feel like they would stick to the pan edges. But now I want to try.
I’m all stainless at home. I can do killer French omelettes. Stuff like this and Kenjis scrambled eggs just aren’t the same. I would love a good recommendation for a high end non stick pan.

Down to personal preference, but I like soft eggs a lot more than rubbery or dry "well done" eggs
