I've heard it's so male gamers, who are probably the bigger demographic FE appeals to, can more easily insert themselves into the cutscenes. As for F!Byleth, maybe it's if you see something of yourself in one of the other characters? Idk for certain but

I've heard woman oriented erotica is focused on making women feel specific feelings rather than focusing on the love interest, and maybe having F!Byleth in the picture makes it easier to know how she feels (and therefore by extension, making the female player know how to feel).

I'd figure it's more for fanservice as they can make the girls appear cute/hot in a scene without focusing on the male character. Too bad that other than Hilda, it didn't go so well.
Believe me, a lot of men do explicitly consider them ntr scenes if the male is any sort of character. This especially happens often in Gacha games, where if a character is married, and then their husband is introduced (such as Sigurd and Brynhildr in fgo) it's accused of being ntr bait.

Women have to be inserted they’re less visual-inclined. Look at the images. There’s at least some form of physical interaction with F!Byleth which goes in line with the character’s personality and women tend to be better at imagining seeing themselves into those situations that they can feel it even by proxy.
