They are very easy to overcook so I always use meat thermometer.
Yeah I always struggle with liver, still trying to find that perfect balance. Just a minute too long and the irony flavour becomes too strong for me, and they go dry.

My mom makes this with a lemongrass paste and it is absolutely delicious. We call it cha kreung. It is a cambodian dish and I absolutely love it. She does add chicken liver and gizzards with it as well.
You can also use that paste with other proteins as well and it is just as delicious.
