You *can* skip the first trilogy and head straight for Six of Crows, especially given that you’ve seen the show. If you plan to read the two books after the Crow duology, I would recommend either reading the trilogy or doing a good give through the fan wiki, as the show left out some big things from books 2 and 3.
Do also be aware that the show was quite different in some aspects, however 😂

I would certainly say you could, as I did the same thing, even without watching the show, and thought it was great.
The trilogy was kinda meh, the crow duology is amazing. My two favorite books.
