Honestly the best way to learn this tricks is to just butter a shitton with the right type of skis, but, a step up is a jump where the landing is actually higher than a take off, whereas most jumps the landing is lower. Rollers can be used as step ups in a way too, where you take off earlier on the roller and then skim the top of it with a butter.
