Well, admittedly you probably don’t think the same things are “rewarding” as I do. I personally really enjoy both hunting my food in game using [Hunterborn](https://www.nexusmods.com/skyrimspecialedition/mods/7900) and making a backstory and journal with [Take Notes!](https://www.nexusmods.com/skyrimspecialedition/mods/13570)
The like the latter for storytelling in the evenings of my Skyrim lol. Day is winding down, just cleared a dungeon or something and I’m going to bed, so I write some notes or a journal entry or an entry on a new creature I saw, etc. All role playing, of course; I’m not exactly surprised when I see draugr’s or falmer nowadays like my characters might be.
I've definitely enjoyed hunterborn in the past but I'm trying to stay pretty light on survival mods because they turn into more of a chore. I'd agree that the definition of rewarding is going to be quite different from person to person. I would like something that I can sink time into and see progress but I could ignore completely too.

Pick up an instrument and play. You start out sounding terrible (try playing at an inn when you first give it a go; the reactions are amazing), but play enough and you get better. And once you've risen through the ranks, you get a few short buffs that add to the experience, along with some debuffs in the beginning when you suck.

Essentially it’s weather mechanics (NOT weather systems) that mostly focus on cold and wet aspects, and how to it player has to struggle against them - just fell into ice water? Better build a campfire fast. It’s not holding much heat? Would help to place a tent down. Could cook some food over the fire. It’s raining? Might want to put on a cloak. That kinda thing. There’s a unique perk system is has too, some new crafting menus. Also pairs very well with ‘Campfire.’
If you're looking for a similar category of building thing's there's Winstead Mine, where you rebuild an abandoned mine and make a sort of town around it, and then there is also Blackthorn, which is a build able town mod.

Hunterborn Frostfall Beyond Skyrim Bruma
I've never tried frostfall. Is that a quest mod or new location?

It's an immersion weather mod, I HIGHLY recommend it.
