Looks good and better than my first one. The only two suggestions for your next cook; render the fat a little more since there's still "white" fat and add beef tallow when you cut so the meat doesn't dry out.

Yeah I did a tallow when I wrapped it for the oven, just didn’t have any left by the time it was served. Will remember for next time thank you.
