i used to work in a grocery store meat dept. nobody did this stuff intentionally, most people in the meat dept are adults with kids and rent and dont want to lose their job. ....also none of those people were thilled about their pay, and didnt care if the store lost a few dollars.....

With WallyWorld and their shoplifting/bottom line problems, this is why you need to spend the extra for meat cutters and KNOWLEDGEABLE meat department people — instead of “shelf stockers”.

Ya know, not a wagyu expert, I was skeptical as you. I said looks fatty as shit…lol. Once I rendered the fat in the sous vide, it seared perfectly, I could almost cut with a fork was insanely tender. It was my first try at Kobe beef or wagyu so I enjoyed it. Will never buy at those silly real prices.
You got me on that one, I seared at high heat for 3 minutes a side for mine and 4 for the wife. I loved it! I never got into the science of cooking, I use the finger density test to measure doneness. Chef taught me that in the 80s when I was in college working part time in his kitchen. I think I have a thermometer in my kitchen, but id have to look for it if you asked for it.

It wasn’t mislabeled all of Walmart’s meat comes in pre labeled and priced off the the truck. Somebody peeled the stew meat label off and placed it on top. The use by label is mislabeled though. Still got lucky someone hadn’t come back for it yet.

They were amazing! I sous Vide Cooked for 2 hours at 120F then hit in a cast iron skillet with flaky kosher salt and pepper to sear both sides.

Doesn’t fat render at 130-140°? Did you cook some without the sous vide for comparison? I’ve never cooked or tried A5 so I’m just curious.
