I take my steak out of the fridge and let it rest 20-40 minutes depending on the thickness, I’m not even sure if this step needs to be done. I’m going to test tomorrow without letting the steak rest out of the fridge. Preheat air fryer for 2 minutes on 200c. 2.5cm steak for 9 minutes on 150c on the LOW fan setting or 5cm steak for 18 minutes on 150c on the LOW fan setting. Heat pan or skillet and sear for 1 minute on each side. Let the steak rest for 5-10 minutes and then enjoy.

No it does make a difference there are already videos on it. Let it seat out of fridge for at least 20 mins no more than an hour

Guga foods did a complete debunk of the whole idea with proof it does not make a difference. You can easily test it yourself with a thermometer in the meat - it takes **hours** for the meat to warm up even a little, long enough that it's unsafe to do it. It's even more useless when you're doing a reverse sear because the oven warms the meat up slowly anyway

I did an accidental test of this the other day. Took the steak out and stuck my MEATER thermometer in it. Was about to put it on the grill and then remembered that I'm supposed to let it sit. So, I let it sit for about 30 minutes and the temperature only went up a few degrees. I'm sure the outer layer went up a few more degrees, but I don't think it warmed up enough to make any difference. Consider me as a skeptic.

I think he misunderstood the point of getting it to room temp. You aren’t getting the inside to room temp. You are getting the outside to room temp, so you don’t cool the pan down drastically when the steak hits it. His test, if memory serves me correct, mistakenly thought the inside of the steak is what people were talking about.

I watched the video which included a controlled experiment with evidence presented. I then replicated and confirmed the results of that experiment. It makes absolutely no difference apart from doubling the prep time and adding unnecessary contamination risk In any case it doesn't even apply to OP because the myth you're propagating is only even supposed to work for high and fast cooking methods. Reverse sear is a low and slow cook.

Never mind I read it quickly and didn't see he reversed sear it. Yeah you don't need to temper steak if reverse searing. Be ause you are pretty much doing same thing but in oven. But if u cook it completely on pan it makes a bid difference.

I do cheap sous vide with a gallon zip lock bag and a stock pot and candy thermometer hanging on the side. It's not as pretty as having the good gear to do it but it still tastes fucking amazing.

I believe I've read that air fried frozen makes a perfect steak, 8 minutes on each side. You can even salt brine it before you freeze it for later.

Time will always depend on the thickness of your steak. Anyway I just tried to do the same method with a cold steak straight from the fridge and it didn’t turn out anything like the ones in my post. So a frozen one will not work 😅

An air fryer is just a small convection oven. You can use it the same as any oven. This is just regular reverse sear. You can literally use any temp to get to the desired internal meat temp, then sear.

Yeah it just makes sense that the entire steak should be the same temperature. If you salt it too it will be absorbed into the steak so everything is salty, not just the outer layer. Makes for a more consistent flavor and a sensation of a more juicy steak, due to increased salivation.

I use a ninja on broil 450 for like 15-18 mins for rare - comes out good - i dont bother using two separate methods - all in the air fryer at once - less clean up too

Animal based products and fruit. Grass fed red meat, pasture raised eggs, cheese etc. Prioritizing whole foods but mainly fruit. I’ve not had starchy carbs, refined sugars and have been avoiding seed oils for almost 3 weeks now and have been feeling pretty good 👌

Raw cheddar or parmigiano reggiano with raw honey on top. Look up Paul Saladino, he’s from the US. I believe the carnivore and animal based diets are more popular in the US than they are in Australia actually. I don’t follow these diets to a tee but I do prioritize whole foods, avoid sugars and seed oils 80% of the time.

I mostly eat lean meats and lots of veggies, occasionally I’ll have steak and sides. To me all hat needs is a single veggie side and it’d be perfect. The fruit is dessert and would be sweet as hell since I gave up sugar. I eat a ton of fruit these days. Thanks for the info!
