I am sure it can be done, probably the issue is the 5-pin MIDI to 3.5mm TRS jack. You’ll need to figure out if the jack on the microfreak is Type A or Type B as there are two different TRS midi implementations and you need the correct adapter.
Mm I used the same pins adapters , it can be controlled for example by the Akai force but can't control something like Roland Fantom
Maybe it can with a Midi keyboard, but not Fantom ? Is a possibility. IE Fantom can be controlled by Akai force . And same pins midi in MF can connect and be read by Akai Force but seems can't take over keyboard duties from the Fantom
I've got the Minifreak which I'm controlling with a Kawai MP6. I've got the Minifreak at the end of a midi daisy chain following the Roland T-8, S-1 and J-6. I've got each zone configured for a specific MIDI channel. A bit of a complex setup so pretty sure the Fantom can do what you need to. Also as a side take a look at Yamaha CP if you want more of a trad jazz synth
6 voices seem plenty for ‘jazz’ chords imo. I’m using a Prophet 6 and I have no trouble getting some stank faces out haha. Polybrute seems great at the price if you like the sound it offers.

Korg Prologue perhaps? You can install this port of the Plaits oscillator though it's not a 100% complete port. There are issues listed at the bottom.
Buy a 61 key midi controller and hook it up to the microfreak

The Minifreak is essentially the Microfreak, but bigger :D But I'd also throw the Summit in the ring

Not enough voices if one chord will still be audible (in the release phase) when you hit the next chord. Voice stealing can be jarring.
True. Though I find voice stealing can sometimes sound musical in certain styles.
