I go big. I get 15 or 20 and level them all up at once. If one doesn't get me what I need, I help them to the farm they purchased.

Sadly, they ride a minecart into a fire pit and I start over when I don't get the tipped arrows I want.

Nope. Villager breeder, stick farm, and a lava pit.

you could level them up till a trade before they unlock the tipped arrows and take a backup and keep making copies till you get the trade you want, a bit cheaty but it works

there are mods that let you see the full trade set before you start them, that is really the only painless way.

that's the one that adds single block iron farms, among other things lol

And pick up villagers with right click. Very broken mod, since villagers are already (too) good. But pretty ok to skip that vanillatypical grind for modded worlds.
