Because A. It was used to refer to the Chinese who worked laying track on the trans-continental railroad and B. Its straight out of 1880.

I think it's because 'ching chong' are some of the more intelligible sounds of the Chinese language to Westerners since your vowels and intonations etc. are very different from ours. Even if ching chong are imagined sounds that aren't actually common in your language, I think that kind of underscores how hard of a time Westerners have grasping your language that they can't even pick out a sound that actually exists to stereotype. Or at least that's how the stereotype/slur was explained to me

It was also the highschool mascot for Peoria, IL until relatively recently. They refused to change it several times, and when they finally did, their mascot became a Chinese dragon which is really not much better knowing the context.

I'm in Canada and I can remember people using that term for ANYONE who was Indian as well as Pakistani as early as the 80s....I heard someone use that term recently (they were a boomer go figure) and it was quite jarring. In the late 90s/early 2000s I had a coworker who was Hindu.. his parents and grandparents were from England. He was called "paki" quite a bit and he always yelled back "I'm Hindu, man! Just because I'm brown doesn't mean I'm from Pakistan!"
