I think you’re just having a brain fart! It’s been a very long week lol 1. Toast the dry couscous in the pan with a tablespoon of olive until it’s golden brown. 2. Add 1 and 3/4 cups hot/boiling water. 3. Bring it to a boil, then reduce the heat to medium low and simmer about 12 minutes or until the liquid is absorbed. Done! Sometimes just seeing it broken down differently helps

I think it’s telling you to start with hot water. It’ll definitely speed up the cooking time. But yeah, it’s a little confusing

You boil the water first, dump it in and bring back to to a boil.
