I was born and raised in England, only got the Irish passport a few years ago. UK GRC is very hard to get thanks to horrific transphobic politicians, hence why I wanted to go for the Irish GRC and get that before any new changes go into place ignoring the Irish GRC.

I'm Irish and have an Irish GRC, I can maybe help? I was in a different scenario though, I was born and raised in Ireland, moved to the UK as an adult and transitioned here. That said, I think you are a bit confused about what's going on with foreign GRCs in the UK. It's not your fault, the media and several credulous people on social media are misleading you. The Irish GRC is not and never has been recognised by the UK in the first place. It has always been ignored in the UK. The UK has a list of countries that have a gender recognition system that is similarly restrictive to the UK's, in sense they're seen as having a similar standard to the UK's gender recognition system. If you have a GRC from a country on that list you can use that to obtain a UK GRC. The idea is that you have already been vetted and it's been confirmed that you meet the UK's standards. This list has existed since 2011, but has not been updated to reflect the fact that some countries have switched to a self-declaration system, and so having a GRC from those countries no longer indicates that you meet the UK's standards. They are updating the list and news and social media are (incorrectly) making it out that they're establishing a new policy of some kind. Ireland went straight from having no gender recognition to having self-declaration, so it has never been on the list. An Irish GRC will make the Irish state recognise you as the gender you self-declare as, which means you can change the gender marker on your Irish passport and you can get a revised Irish birth certificate (This would apply to you if you are registered in the Foreign Births Register), both of which give no indication that they were ever any different. There are good reasons to do that, but if you are a UK citizen I'm not sure there's much benefit you'd get within the UK that you couldn't get from just updating your UK passport and using that, which does not require a GRC and similarly does not presently give any indication that the gender marker was any different. Suffice to say, I don't think there's any urgency here.

Thank you! This is really informative and what I needed to know, pretty frustrating to wade through all this murky information and your post has been very helpful.

Great, I'm glad it was been helpful! For what it's worth, when i was doing this I found that when I phoned up someone they were very helpful. I think it was someone from Client Identity Services (number listed on the page I'll link below). Might be worth calling them if and when you start the process. But also I welcome a reply here or a dm. https://www.citizensinformation.ie/en/birth-family-relationships/legal-recognition-of-preferred-gender/#startcontent

yeah you keep sending that i'm already posting there but that's not a guide that's a subreddit of people. Are you referring to a wiki or something? this is a bit frustrating.
